ALTA LANGA DOCG BRUT CLASSIC METHOD

Grape: Pinot Noir 100%

Harvest: Grapes are selected and harvested by hand in 20 kg perforated boxes.

Vinification: Soft pressing of the whole grapes and obtaining the free-run must. Clarification by nitrogen flotation to avoid oxidation of aromas and delicate colour.
Addition of selected yeasts Saccaromyces Cerevisiae and conduction of alcoholic fermentation at a temperature of 15°C in a thermo-conditioned tank.
Static clarification and cold stabilization during the winter

Draft: Carried out in the week of the growing moon in the month of March or April, in the year following the harvest with addition of selected yeasts for the second fermentation.

Refinement: In bottle, on the lees for 30 months. During the period of refinement the sediments are brought back into suspension (Coupè de Poignet).

Disgorgement: After 30 months on the lees, the remuage is carried out by hand on the Pupitres. The liqueur d’expédition that characterizes each vintage is added to the final disgorgement
